Jack-O’-Lantern Stuffed Peppers
- Bell peppers (orange for a pumpkin look)
- Cooked rice
- Ground meat (beef, turkey, or a vegetarian alternative)
- Onion, finely chopped
- Garlic, minced
- Diced tomatoes
- Black beans
- Shredded cheese
- Spices: cumin, chili powder, salt, and pepper
- Olive oil
- Prep the Peppers:
- Cut the tops off and clean out the inside of the peppers.
- Carve small jack-o’-lantern faces on one side of the peppers.
- Prepare the Filling:
- Sauté onions and garlic in olive oil until translucent.
- Add ground meat and cook thoroughly.
- Add tomatoes, black beans, corn, and spices, and simmer for a few minutes.
- Mix in cooked rice and a handful of shredded cheese.
- Stuff and Cook:
- Fill the carved peppers with the mixture.
- Bake at 375°F (190°C) for about 25-30 minutes.
- Top with more cheese and bake for an additional 5 minutes until cheese is melted.
