Jack-O’-Lantern Stuffed Peppers


  • Bell peppers (orange for a pumpkin look)
  • Cooked rice
  • Ground meat (beef, turkey, or a vegetarian alternative)
  • Onion, finely chopped
  • Garlic, minced
  • Diced tomatoes
  • Black beans
  • Corn
  • Shredded cheese
  • Spices: cumin, chili powder, salt, and pepper
  • Olive oil


  1. Prep the Peppers:
    • Cut the tops off and clean out the inside of the peppers.
    • Carve small jack-o’-lantern faces on one side of the peppers.
  2. Prepare the Filling:
    • Sauté onions and garlic in olive oil until translucent.
    • Add ground meat and cook thoroughly.
    • Add tomatoes, black beans, corn, and spices, and simmer for a few minutes.
    • Mix in cooked rice and a handful of shredded cheese.
  3. Stuff and Cook:
    • Fill the carved peppers with the mixture.
    • Bake at 375°F (190°C) for about 25-30 minutes.
    • Top with more cheese and bake for an additional 5 minutes until cheese is melted.
